I don't want the paint to seep through and ruin my design.

And what kind of paint is best? gouache? acrylic paint? spraypaint?

Acrylic with a fabric medium mixed to that. Us a sponge type 'brush' to apply the paint.

Personally I like to airbrush with acrylics. That takes some practice, though.

I would use acrylic paint. Just take your time with it and be careful. I would dab it on with a stencil brush and do 2 - 4 layers so the colors build up nice. Don't forget to tape down your stencil or you could sprasy a little fixative on the back of the stencil. This will stick to your t-shirt temporarily.
