I love to make my own books using two cardboard pieces and paper maché. However, when I paper maché or paint it, the board ends up curving upwards.

Is there any way/technique to prevent this from happening

i dont know about preventing it, but when you paint, dont use a lot of paint- thats what warps it more.

Try painting or at list priming the cardboard both sides at the same time , it curves because the painted side has tighten up living the back to stretch , so if you prime both sides it will stabilize.

you could try painting it in layers, let each layer dry thoroughly before placing the next layer. Its a little fussy, but you will notice that it comes out smoother. you could also try beginning with a stronger stock, try matboard for instance. tmay cost a little more, but its an investment in quality.
