I have been using the "acrylic" ones to paint plaster castings then laquer them...will the "watercolour" ones do the same job?

No. Water color paints will seep deeply into the plaster. Acrylic paint with stay on the surface of plaster much better. W/C paints are all very transparent as well, they are meant to be used on white paper where the color of the paper actually helps create lighting. Acrylic paint is opaque, and rarely will you see anything underneath the paint.

Acrylic paints are fixed when dry because of the acrylic base. Watercolour is a translucent paint for painting on paper. However acrylics are very good for painting strong colours in a watercolour style. If you are using paint for painting on plaster then there are some excellent craft paints which you may find work much better than acrylic which don't need the laquer which may save you time.
